Grilled Sweet Potato Toast

This zesty, vibrant BBQ side only takes a few store cupboard ingredients to make, but it’s certain to impress your guests — even the picky ones! Sweet potato and herbs pack a serious punch of flavour, while a squeeze of Primula cheese makes sure this dish really melts together with every bite.

  • 4 Sweet Potatoes
  • 140g Primula Cheese
  • Olive oil
  • 50ml white wine vinegar
  • ½ lemon, juiced
  • 1 handful of parsley, roughly chopped
  • 2 garlic cloves, minced
  • 1 tbsp. olive oil
  • ½ chilli, finely chopped
How you do it
How you do it
  • Place four sweet potatoes in the microwave and heat at 600w for two minutes.
  • Slice sweet potato into ¼“ slices.
  • Brush lightly with olive oil and place on the grill. Cook for five minutes on each side.
  • Meanwhile, place all the dressing ingredients into a sealed jar. Shake well before serving.
  • Remove sweet potato from the grill and top with melty Primula Cheese and dressing.
  • Serve warm for maximum compliments.
