Air Fryer Loaded Potato Skins

  • 4 Maris Piper potatoes
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 70g Primula Cheese ‘n’ Chive
  • 4 grilled rashers streaky bacon, diced
  • Spring onions, finely chopped
  • Fresh chives, finely chopped
  • Mixed leaf salad, to serve

  • Preheat your air fryer at 200°C for 5 minutes.
  • Scrub your Maris Piper potatoes so that they are clean and dirt-free. Using a knife, slightly break the skin around the middle of each potato, where they will be halved. Coat the potatoes with olive oil, salt, and pepper, place them in the air fryer basket, and air fry for 35 – 40 minutes.
  • Remove the baked potatoes from the air fryer basket and set aside. Once cool, cut your potatoes in half lengthwise and scoop out most of the baked potato flesh, leaving approximately ¼ inch of flesh in the skins.
  • Place the potato skins in the air fryer basket, skin side up, and cook for 10 minutes. Flip them and then cook for a further 8 minutes.
  • Remove the potato skins from the air fryer and load up with bacon, Primula Cheese ‘n’ Chive, spring onion, and fresh chives. Serve.
