
Squeeze & Chive Potato Salad
Potato salad is a summer favourite and easy to rustle up in bulk, making it an ideal dish for BBQ’s!

What you need
- 140g Primula Cheese with Chives
- 500g new potatoes, halved
- ½ lemon, juice only
- 1 handful parsley, chopped
- 1 tbsp capers, chopped
- ¼ red onion, thinly sliced
How you do it
Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender.
Drain and set aside to cool.
In a large bowl mix the Primula Cheese, black pepper, lemon juice, parsley and capers.
Add a generous seasoning of black pepper, and sea salt, to taste.
Add the potatoes to the bowl and stir until evenly coated with the mixture.
Garnish with red onion and serve.
