Air Fryer Creamy Tuna Melt Stuffed Peppers

  • 2 bell peppers, halved and cored
  • 100g long grain rice
  • 145g tuna chunks in brine
  • 1 celery stalk, finely chopped
  • 2 spring onions, sliced
  • 70g Primula Light Cheese ‘n’ Onion
  • ½ lemon, squeezed
  • 1tsp Dijon mustard
  • ¼tsp salt
  • ¼tsp black pepper

How you do it
  • Boil the rice according to pack instructions.
  • Place the prepared pepper halves in the air fryer for 5 minutes at 200°C.
  • In a mixing bowl, stir half the Primula Light Cheese ‘n’ Onion, lemon juice, Dijon mustard, salt, and pepper until well combined.
  • Add the tuna, celery, and most spring onions (leaving some for garnish). Gently stir until well combined.
  • Fill the pepper halves about halfway with the cooked rice. Place the tuna salad on top of the rice. Cook the peppers at 200°C for a further 5 minutes.
  • Garnish with Primula Light Cheese ‘n’ Onion, spring onions and serve.
