Pizza Topped Chicken

This Pizza Topped Chicken is the perfect guilt-free treat for a Saturday night in.

  • Yields: 2 servings


Low-calorie cooking spray

1 small red onion, diced

1 small garlic clove, crushed

1 red pepper, diced

1 tbsp stock

1 can of chopped tomatoes

3 chopped vine tomatoes

1 tbsp tomato puree

3 tbsp dried oregano

2 skinless and boneless chicken breasts

150g Primula Light Cheese

Low-calorie cooking spray


1Preheat oven to 220°C.

2Heat the cooking spray in a large frying pan over a medium heat. Add onion, garlic and red pepper and fry until soft.

3Place the fried ingredients into a saucepan and add stock, chopped tomatoes, vine tomatoes, tomato puree and oregano and simmer for 5 minutes. Keep to one side until needed.

4Butterfly the chicken breast by cutting it in half horizontally, without cutting the whole way through.

5Spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the chicken and fry to colour on both sides. Place the chicken on a baking tray and bake in the oven for 15-20 minutes, or until cooked through and the juices run clear.

6Remove the chicken from the oven and spread the tomato mixture over chicken. Add Primula Light Cheese on top, along with any other additional toppings of your choice. Place back in oven until cheese starts to brown.

7Serve with salad and/or sweet potato fries.
