Cheese & Chive Potato Salad

Potato salad is a summer favourite and easy to rustle up in bulk, making it an ideal dish for BBQ’s!


500g new potatoes, halved

150g Primula Cheese with Chives

½ lemon, juice only

1 handful parsley, chopped

1 tbsp capers, chopped

¼ red onion, thinly sliced


1Place the new potatoes in a pan of lightly salted boiling water. Cover and simmer for 15 minutes or until tender.

2Drain and set aside to cool.

3In a large bowl mix the Primula Cheese, black pepper, lemon juice, parsley and capers.

4Add a generous seasoning of black pepper, and sea salt, to taste.

5Add the potatoes to the bowl and stir until evenly coated with the mixture.

6Garnish with red onion and serve.
