Squeeze Stuffed Sweet Potato

These easy-to-prep potato skins are perfect for a bonfire or as an autumnal snack. With satisfyingly good-for-you sweet potatoes as the base, the crispy bacon and herby cheese flavours help add even more great taste to this 4-ingredient side — all with minimal effort. Once you master this, you can get creative with other cheesy flavours!


What you need

  • 4 Sweet Potatoes
  • 1 tube of Primula Cheese ‘n’ Chives
  • Crispy bacon
  • Olive oil

How you do it

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.

  2. Prick the skins of the sweet potatoes all over with a fork and rub with a small amount of olive oil.

  3. Place potatoes on a baking tray and bake in the oven for about 45 minutes or until tender.

  4. Towards the end of the cooking time, preheat the grill to hot. Place your bacon strips under the grill and cook until crispy.

  5. Once baked, cut the sweet potatoes in half lengthways and, keeping the skins intact, scoop the flesh from the sweet potatoes into a bowl.

  6. Add a squeeze of Primula Cheese ‘n’ Chive into the skins of your sweet potato.

  7. Brown your potatoes under the grill. Then top with crispy bacon, serve, and savour!
