No-Mess Moussaka

1 pan, lots of luscious layers, and even more flavour make this a dish you definitely won’t want to miss out on. It’s traditional comfort-food, Greek style, and it’s easy to recreate any night of the week. Swap out the lamb for beef to mix it up, and don’t skip the pitta — it pairs perfectly as a side.

  • 2tbsp olive oil
  • 1 large onion, diced
  • 2 garlic cloves, finely chopped
  • 500g minced lamb
  • 1 aubergine, diced
  • 400g tin chopped tomatoes
  • 2tbsp tomato purée
  • 2tsp ground cinnamon
  • 2tsp mint sauce
  • 150g Primula Original Cheese
  • 1 handful of fresh mint, chopped (optional)
How you do it
How you do it
  • Heat the oil in a large shallow pan. Then add the onion and garlic and fry until soft.
  • Add the mince and aubergine and fry for 5 minutes, until the meat is browned.
  • Add the chopped tomatoes, tomato purée and cinnamon, then season to taste. Simmer for 20 minutes.
  • Add the mint sauce and stir through.
  • To serve, top with Primula Original Cheese and, if you’d like, fresh mint.
  • Serve with salad and toasted pitta, and enjoy!
