Squeeze & Ham Egg Muffin Bites

Squeeze & Ham Egg Muffin Bites are are perfect make-ahead snack or a Spring get together finger food. High protein and full of Squeezy cheese goodness, snacks don’t get much better.

  • Makes 12 Muffins or 8 Smaller ones

What You Need

  • 140g Primula Cheese & Ham
  • 6 large eggs
  • 50ml semi-skimmed milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ red pepper, finely diced
  • ½ yellow pepper, finely diced
  • 1 handful spinach, chopped
  • 2 tbsp chives, finely chopped
  • 3 slices streaky bacon (optional, for topping)

How You Do It

  1. Preheat the oven to 180°C (fan). Lightly grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs, milk, salt, black pepper, and smoked paprika until fully combined.
  3. Stir in the diced peppers, chopped spinach, and chives.
  4. Pour the egg mixture evenly into the muffin cases, filling each about ¾ full.
  5. Pipe a small swirl (about 1 tsp) of Primula Cheese & Ham into the centre of each muffin.
  6. Bake for 15-18 minutes, or until the muffins are set and slightly golden on top.
  7. For extra creaminess, add a final squeeze of Primula Cheese & Ham on top.
  8. For crunch, crisp up the bacon in a dry pan, then crumble over the muffins.
