Signature Mini Squeezy Cheesy Loaded Potatoes
Christmas isn’t complete without a delicious potato dish – and there’s no going back from this ultimate, easy festive take on the loaded potato from the queen of potatoes herself, Poppy Cooks. What you need
- New potatoes – 1kg
- Oil – 2tbsp
- Butter – 50g
- Garlic – 2 cloves
- Parsley – 1 small handful, chopped
- Primula Original Cheese/Cheese ‘n’ Chives/Cheese ‘n’ Ham
How you do it
Preheat your oven to 200°C Fan
Drizzle some oil onto an oven tray, throw your potatoes onto the tray, season with a good sprinkling of salt and shake your tray until the potatoes are evenly covered in the oil and salt mix. Roast in the oven for 40 minutes
Whilst your potatoes are cooking, it’s time to make your garlic-butter garnish. Melt your butter in a bowl, crush in your garlic and add your chopped parsley and give it a good mix
When your potatoes are crispy and golden brown, remove from the oven and cut around six small slices into the top of each potato so they easily open up ready for your toppings.
Fill each little potato to the brim with your Primula cheese of choice, drizzle with your garlic-butter mixture and pop back in the oven for another 15-20 minutes until they’re sizzling and thoroughly crisp. Finish with a drizzle of the pan juices for a final flourish – and enjoy!
