Easy Squeezy French Toast
Sweet and savoury have always went well together, why not add a bit of squeeze to your morning and make it even more delicious?

- 5-10 minutes
Ingredients
- 2 large eggs
- 4 thick slices brioche
- 2tbsp vegetable oil
- 2tbsp butter
- For the blueberry compote (optional)
- 150g blueberries
- 4tbsp golden syrup
- 2tbsp water
- 1tbsp fresh lemon juice
- 1/2tsp vanilla extract
Method
- Whisk together the eggs. Lay the brioche slices in a single layer in a shallow dish and pour the beaten eggs over them. Allow to soak for two minutes, then carefully turn over and soak for a further two minutes.
- Heat the vegetable oil and butter in a non-stick frying pan over a medium heat. Carefully place the two slices of brioche into the hot frying pan. Fry for three minutes on each side. Repeat with the additional slices.
- Serve with a squeeze of Primula Original Cheese and homemade blueberry compote.
For the blueberry compote:
- Combine 75g blueberries, water, lemon juice, golden syrup and vanilla in a small saucepan. Simmer over medium heat for 10 minutes, stirring occasionally.
- Add the remaining 75g and cook for 8 minutes, stirring occasionally. Remove from heat. The mixture will thicken as it cools.
