Ham & Squeeze Ultimate Rarebit Toasties

What you need
- 2tbsp olive oil
- 1 garlic clove, halved
- 250g mushroom, cleaned and sliced
- 1tbsp parsley, chopped
- 2tbsp plain flour
- 2tbsp butter
- 250ml milk
- 50ml dark beer
- 80g Primula Cheese ‘n’ Ham
- 2½ tsp English mustard
- 1tsp hot sauce
- A pinch of smoked paprika
- 1 garlic clove, cleaned and sliced in half
- 45g roasted ham
- 4 chunky slices of sourdough bread
How you do it
Add 1 tbsp of olive oil to a pan and heat over medium-high heat. When the oil is hot, add the garlic, stir, and cook until softened.
Remove the garlic. Add the mushroom to the pan and cook for 4-5 minutes without stirring.
Add 2 tbsp water and allow it to evaporate. Add the parsley and continue cooking for 3-4 minutes, stirring occasionally until cooked.
Season with salt and pepper and set aside.
Preheat the oven to 180°C fan.
Put the flour, butter, milk, beer, Primula Cheese ‘n’ Ham and mustard into a pan. Set over a medium heat and stir with a whisk until thickened and smooth. Add the hot sauce and smoked paprika. Cover the surface with cling film to prevent skin from forming and set aside to cool. If stored in the fridge, you can make the rarebit sauce up to 3 days before use.
Place the slices of bread on a baking tray with parchment paper and pour some olive oil on top of each piece. Toast the slices for 5-7 minutes. Remove the baking tray from the oven, flip the toast, pour the rest of the olive oil on top of each slice, and bake for another 5-7 minutes or until the bread is crunchy.
Top the toast with ham, mushrooms, and rarebit sauce, leaving some for the top. Sandwich together and top with the remaining sauce. Place in the oven for 2-3 minutes and serve immediately.
