Boxing Day Yorky Squeeze Pudding Wrap

What You Need:
- 140g plain flour
- 4 eggs
- 200ml full-fat or semi-skimmed milk
- 2 tbsp vegetable oil
- 100g kale leaves
- 50g frozen peas
- 200g leftover turkey breast
- 140g Primula Pigs in Blankets
- Cranberry sauce
- 100ml gravy
How You Do It:
- Whisk the eggs, flour and milk with a pinch of salt until smooth. Cover and rest for 30 minutes.
- Heat the oven to 200 fan and boil a large pan of salted water. Heat the oil in a large roasting tin (40cm x 30cm approx.) in the oven for 10 minutes. Once hot, pour in the batter and cook for 25 minutes or until puffed up and golden.
- Tip the peas and kale into the boiling water and cook for 2-3 minutes until tender. Drain well and season.
- When the Yorkshire pudding comes out of the oven, remove it from the tin and flatten it with the back of a large metal spoon and half lengthways. Spread 1 tbsp cranberry sauce, 70g of Primula Pigs in Blankets over each half, followed by the turkey pieces, peas, kale, and gravy. Wrap up and serve.
