Boxing Day Yorky Squeeze Pudding Wrap

Primula Pigs In Blankets

What You Need:

  • 140g plain flour
  • 4 eggs
  • 200ml full-fat or semi-skimmed milk
  • 2 tbsp vegetable oil
  • 100g kale leaves
  • 50g frozen peas
  • 200g leftover turkey breast
  • 140g Primula Pigs in Blankets
  • Cranberry sauce
  • 100ml gravy

How You Do It:

  1. Whisk the eggs, flour and milk with a pinch of salt until smooth. Cover and rest for 30 minutes.
  2. Heat the oven to 200 fan and boil a large pan of salted water. Heat the oil in a large roasting tin (40cm x 30cm approx.) in the oven for 10 minutes. Once hot, pour in the batter and cook for 25 minutes or until puffed up and golden.
  3. Tip the peas and kale into the boiling water and cook for 2-3 minutes until tender. Drain well and season.
  4. When the Yorkshire pudding comes out of the oven, remove it from the tin and flatten it with the back of a large metal spoon and half lengthways. Spread 1 tbsp cranberry sauce, 70g of Primula Pigs in Blankets over each half, followed by the turkey pieces, peas, kale, and gravy. Wrap up and serve.
