BBQ Pulled Chicken Stuffed Sweet Potato with Squeeze & Ham

Try these BBQ Pulled Chicken Stuffed Sweet Potatoes, they’re great for family get togethers, BBQs, or a tasty mid-week meal!


What you need

  • 100g Primula Cheese ‘n’ Ham
  • 5 sweet potatoes
  • Vegetable oil
  • 3 chicken breasts
  • 100g kale
  • 1 red pepper, diced
  • 450g BBQ sauce

How you do it

  1. Preheat oven to 220 ° C.

  2. Pierce holes in the sweet potatoes with a fork and microwave for 15 minutes until potato is soft.

  3. Place in the oven and bake for 45 minutes.

  4. Warm oil over medium heat in a large frying pan, cook chicken breasts until chicken is cooked all the way through and set aside.

  5. Remove sweet potatoes from the oven.

  6. Preheat grill to high.

  7. Using two forks, shred the cooked chicken and return to the pan. Add kale, pepper and BBQ sauce and mix to coat evenly.

  8. Cut each sweet potato down the middle and fill with shredded chicken.

  9. Top with Primula Cheese ‘n’ Ham, and grill for 2-3 minutes.

  10. Serve hot.
