Squeeze and Bacon Festive Filo Bites
Let’s talk festive snacks done right: crispy filo pastry, creamy Primula Cheese & Chives, smoky pancetta, and sweet caramelized onion. These bite-sized beauties are as easy to make as they are to eat (read: very). Whip them up, pop them in the oven, and watch your guests devour them faster than you can say “pass the filo.” Makes 12, but trust us, you’ll want more.

What You Need
- 150g pancetta, diced
- 420g Primula Cheese & Chives
- 50g butter, melted
- x6 filo pastry sheets
- Half red onion
- 1tsp of brown sugar
- 1tbsp of olive oil
- Fresh thyme springs
How You Do It
- Add olive oil into a frying pan. Add the onions when the oil is warm and cook over low heat for 5 minutes, stirring often. Add the sugar and cook, stirring occasionally, for another 5 minutes or until the onions turn a rich golden brown. Set aside.
- In the same pan, cook the pancetta cubes, allowing all the fat to evaporate. When the pancetta is crispy, pour it into a bowl with 210g of Primula Cheese & Chives and mix well. Set aside.
- Preheat the oven to 170C degrees (fan).
- Cut six filo pastry sheets into 10cm squares
- Brush each separate piece with melted butter and layer them into twelve greased muffin tins
- Bake for 5 minutes until the pastry is almost cooked. Spoon the cheese and the pancetta mixture into the tarts and bake for four more minutes.
- When the tarts are ready, finish garnishing them with Primula Cheese & Chives, caramelised onion and fresh thyme.
