What You Need

  • Ingredients for fruit mince:
  • 240g mixed dried fruit
  • 1 medium or 2 small Granny Smith apples, cored and grated
  • 100g Demerara sugar
  • 2tsp orange zest, finely zested
  • 3tbsp fresh orange juice, freshly squeezed
  •  2tbsp water
  • 1tsp cinnamon
  • 1tsp nutmeg
  • 1tsp ground cloves
  • 28g unsalted butter
  • 2tbsp whisky, or additional fresh orange juice.
  • Ingredients for the Christmas tree:
  • 2 puff pastry sheets, 320g
  • 2 Primula Original Cheese
  • 1 egg
  • Homemade fruit mince

How You Do It

  1. In a medium-size saucepan, combine dried fruit, grated apple, Demerara sugar,
orange rind, orange juice, water, cinnamon, nutmeg and ground cloves.
  2. Over medium heat, and stirring to dissolve the sugar, bring the mixture to boil and
simmer gently for 10 minutes until most of the liquid is evaporated.
  3. Remove from the heat and stir in the butter. Set aside to cool.
  4. When cool, add the whisky or additional orange juice and stir.
  5. Remove the puff pastry from the fridge and preheat the oven to 200 C degrees fan.
  6. Unroll one puff pastry sheet onto a baking tray lined with parchment paper and
spread the fruit mince over the puff pastry.
  7. Fold the puff pastry in half like a book.
  8. Cut the piece into a triangle for the Christmas tree shape.
  9. Along the diagonal edges, cut strips into the centre on each side leaving a gap in
    the middle.
  10. Take the edges of piece and turn round to make spirals.
  11. Using the leftover pieces of puff pastry use a knife to cut a rectangular shape and a
start cutter to cut out stars.
  12. Attach the rectangular piece to the base of the tree forming the trunk and add a star to the top of the tree.
  13. Gently whisk the egg with a fork and using a pastry brush, brush the egg over the pastry.
  14. Bake for 20 minutes until gold golden brown.
  15. When it’s ready, add the Primula Original Cheese before serving. You can melt the cheese in a small pan and pour it over or you can directly squeeze it over the tree.
