Light and Squeezy Loaded Wedges

Crisp, sweet potato wedges topped off with chicken and pepper fajita mix and a squeeze of Primula Light Cheese. Enjoy the food you love without losing taste!


  • Serves 2
  • 40 minutes

What you need

For the Wedges:

2 medium sweet potatoes

Spray oil

Pinch Onion Salt

Pinch Black Pepper

 

For the Fajita Mix:

1 large chicken breast, sliced

1/2 red pepper, sliced

1/2 green pepper, sliced

1 onion, sliced

1 tbsp Fajita seasoning

¼ tsp salt

 

To finish:

140g Primula Light Cheese

1 handful of roughly chopped coriander

How you do it

  1. Cut the sweet potatoes into wedges and place into a bowl
  2. Give the wedges a few sprays of oil and season with the onion, salt and black pepper
  3. Place the wedges in a single layer in an air fryer – cook at 160ºc for 20 minutes
  4. Give the wedges another spray of oil, shake and cook for a further 5 minutes at 200ºc
  5. Whilst the wedges are cooking, prepare the fajita mix by placing all the ingredients into a bowl and mixing well
  6. In a hot frying pan, using a few sprays of oil, cook the fajita mixture for around 10 minutes until the chicken is cooked through
  7. To serve, layer up the wedges with the fajita mixture on top, followed by a generous squeeze of Primula Light Cheese and the coriander
