Light and Squeezy Loaded Wedges
Crisp, sweet potato wedges topped off with chicken and pepper fajita mix and a squeeze of Primula Light Cheese. Enjoy the food you love without losing taste!

What you need
For the Wedges:
2 medium sweet potatoes
Spray oil
Pinch Onion Salt
Pinch Black Pepper
For the Fajita Mix:
1 large chicken breast, sliced
1/2 red pepper, sliced
1/2 green pepper, sliced
1 onion, sliced
1 tbsp Fajita seasoning
¼ tsp salt
To finish:
140g Primula Light Cheese
1 handful of roughly chopped coriander
How you do it
- Cut the sweet potatoes into wedges and place into a bowl
- Give the wedges a few sprays of oil and season with the onion, salt and black pepper
- Place the wedges in a single layer in an air fryer – cook at 160ºc for 20 minutes
- Give the wedges another spray of oil, shake and cook for a further 5 minutes at 200ºc
- Whilst the wedges are cooking, prepare the fajita mix by placing all the ingredients into a bowl and mixing well
- In a hot frying pan, using a few sprays of oil, cook the fajita mixture for around 10 minutes until the chicken is cooked through
- To serve, layer up the wedges with the fajita mixture on top, followed by a generous squeeze of Primula Light Cheese and the coriander
