White Bean Chilli

Tube of Primula Original Cheese
  • 1 tbsp Primula Original Cheese
  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 stalk celery, diced
  • 2 large carrots, diced
  • 2 cloves garlic, diced or crushed
  • ½ green chilli, deseeded and diced
  • 200g sweetcorn, drained
  • 2 tins cannellini beans, drained and rinsed
  • 1 tin black beans, drained and rinsed
  • 1L vegetable stock
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper
  • 2 tsp dried oregano
  • 1 lime, juice of
    • To serve:
    • 2 tbsp Primula Original Cheese
    • ½ green chilli, sliced
    • 2 tbsp fresh coriander, chopped
    • 2 spring onions, sliced
How you do it
How you do it
  • Heat the oil in a large pot over medium heat.
  • Add the onion, celery, carrots, garlic and chilli and cook for 5 minutes until starting to soften.
  • Tip in the stock along with the sweetcorn, black beans and 1 tin of cannellini beans.
  • Add the paprika, cayenne pepper, cumin and oregano and mix well.
  • Set the heat to high.
  • Meanwhile, blend the other tin of cannellini beans in a food processor until mostly smooth.
  • Add the bean paste to the pot and mix well. Season to taste with salt and pepper.
  • Bring to the boil and then cook on a strong simmer, for 20 minutes until thickened.
  • Stir through 1 tbsp Primula Original Cheese, lime juice and 1 tbsp coriander.
  • Serve topped with more coriander, sliced chilli, spring onions and a squeeze of Primula Original Cheese.
