Roasted Tomato & Basil Bites

These Roasted Tomato & Basil Bites are perfect for lazy summer days in the sunshine. Or as an after work snack on Friday evening. Or… you know what? We can’t think of a time these wouldn’t be great. Fresh cherry tomatoes, piled on top of a baguette, creamy Primula cheese…our mouths are watering already.

  • 150g Primula Cheese
  • 300g cherry tomatoes
  • 2 tbsp olive oil
  • 3 cloves of garlic
  • A handful of fresh basil
  • 1/4 tsp sea salt (and a dash of pepper is optional)
  • 1 baguette
How you do it
How you do it
  • Preheat your oven to 180°C/350°F/Gas Mark 4.
  • Place tomatoes, olive oil and garlic in an oven-proof dish and cook for 40 hour minutes.
  • Meanwhile, slice the baguette in half and cut into 8cm pieces then place on a baking tray. Put in the oven and bake until golden.
  • Remove from the oven, add the basil and season to taste. Set aside and allow to cool.
  • Serve with Primula Cheese and fresh basil, and enjoy all summer long!
