Roasted Tomato & Basil Bites
These Roasted Tomato & Basil Bites are perfect for lazy summer days in the sunshine. Or as an after work snack on Friday evening. Or… you know what? We can’t think of a time these wouldn’t be great. Fresh cherry tomatoes, piled on top of a baguette, creamy Primula cheese…our mouths are watering already.
What you need
- 150g Primula Cheese
- 300g cherry tomatoes
- 2 tbsp olive oil
- 3 cloves of garlic
- A handful of fresh basil
- 1/4 tsp sea salt (and a dash of pepper is optional)
- 1 baguette
How you do it
Preheat your oven to 180°C/350°F/Gas Mark 4.
Place tomatoes, olive oil and garlic in an oven-proof dish and cook for 40 hour minutes.
Meanwhile, slice the baguette in half and cut into 8cm pieces then place on a baking tray. Put in the oven and bake until golden.
Remove from the oven, add the basil and season to taste. Set aside and allow to cool.
Serve with Primula Cheese and fresh basil, and enjoy all summer long!
