Roasted Smashed Potatoes with Creamy Cheese Dip
These roasted smashed potatoes with a creamy cheese dip will take your party food game to the next level. Perfect for Royal celebrations or snacking, this delicious dish is sure to please everyone’s taste buds.
What you need
- 140g Primula Original Cheese
- 1kg new potatoes
- 1tbsp rock salt, for boiling
- 30g unsalted batter, melted
- 1/2tsp rosemary
- 1/2tsp thyme
- 1tbsp truffle oil
How you do it
Bring a pot of water to the boil, add 1 tbsp of rock salt. Cook the potatoes until soft.
Preheat the oven to 180°C fan.
Drain the potatoes and let them dry in the colander for 5 minutes.
Place them on top a baking tray with parchment paper, then use a large fork or potato masher to squish them, keeping them in one piece.
Leave on the tray to steam dry for 5 minutes.
Brush them with butter. Sprinkle the rosemary, thyme, salt, and pepper on top.
Bake for 45 minutes or until deep golden and crispy, do not flip them.
Serve hot, drizzled with truffle oil, and dipped in Primula Original Cheese.
