Primula Pittas

Is that the ‘pitta’ patter of feet running to enjoy your delicious pittas? We think so! These perfectly portable pittas make great picnic fare, but they’re also a fun snack for those days when you need something light but filling. If you’re feeling fiery, add a squeeze of Primula Cheese 'n' Jalapeños for the perfect extra kick.

  • 4 pitta bread
  • 150g tube of Primula Light Cheese
  • 3 tomatoes, finely chopped
  • 1 yellow pepper, sliced and deseeded
  • 3 spring onions, finely chopped
  • A large handful of fresh basil leaves picked and finely chopped (with a few leaves kept whole for garnish)
  • 2 tbsp white wine vinegar

  • Preheat your oven to 200°C/400°F/Gas Mark 6.
  • Place the pitta directly onto the shelf and cook for 10 minutes.
  • Remove pitta bread from the oven and cut into three ‘triangles’.
  • Combine the tomatoes, peppers, spring onions, basil and vinegar in a bowl to make a salsa. Season to taste.
  • Spread a generous squeeze of Primula Cheese onto each piece of pitta.
  • Drain the salsa with a sieve and spoon on top of each triangle.
  • Garnish with the whole basil leaves and feed to your adoring crowd!
