Prawn and Avocado Crostini

Omega-3 rich prawns and the healthy fats we get from avocados make this a nutrient-filled (and moorish!) snack. These bite-sized beauties are ideal for lunches, appetizers and parties.

Primula Cheese 'n' Prawns
  • 1 tube Primula Cheese 'n' Prawns
  • 1 small loaf ciabatta bread
  • 1 large ripe avocado
  • 80g cooked king prawns
  • 1 lemon
  • ½ tsp garlic powder
  • 1 tbsp chopped fresh coriander
How you do it

  • Preheat the oven to 180c.
  • Slice the bread into thick rounds and lay out on a baking tray. Spray or drizzle with olive oil and cook for 8-10 minutes until golden.
  • Meanwhile, dice the avocado and add to a bowl with the garlic powder, half the coriander and juice of half the lemon. Season with salt and pepper and mix well.
  • Transfer the bread slices to a tray and spread each slice with Primula Cheese 'n' Prawns.
  • Top each slice with a spoonful of avocado mix and a prawn.
  • Finish with a sprinkle of coriander and a crack of pepper. Serve.
