Pork Belly Sliders with Cheesy Apple 'Slaw

Feed a crowd with these BBQ pork belly sliders stuffed with cheesy apple 'slaw! The pork belly is oven-braised in apple juice to keep it nice and tender. Then it's brushed with sticky BBQ sauce and can be finished on the BBQ or under the grill. Each slider is generously filled with a cheesy apple coleslaw made with Primula Cheese 'n' Chives. This makes an ideal flavour combo that works beautifully with the BBQ pork to squeeze every bit of joy out of summer!

  • 450g pork belly slices
  • 125ml apple juice
  • 3-5 tbsp BBQ sauce of choice
  • Mini burger buns/rolls
  • For the cheesy apple 'slaw:
  • Juice from 1/2 lime
  • 3 tbsp crème fraîche
  • 75g Primula Cheese 'N' Chives
  • 1/4 white cabbage, shredded
  • 1-2 medium carrots, peeled into thin strips
  • 5-6 radishes, cut into strips
  • 1 red apple, cut into 'matchsticks'
  • 1-2 red spring onions, sliced
  • 1tbsp apple cider vinegar
  • Pinch salt & Pepper to taste
  • Small bunch fresh coriander, chopped

  • 1. Pre-heat oven to 180ºC/Gas Mark 4.
  • Place the pork belly strips on a baking tray and pour in the apple juice. Wrap the tray in tin foil and cook for 1.5hrs, checking/turning the pork periodically
  • Meanwhile, make the coleslaw by first mixing the lime juice, crème fraîche and Primula Cheese 'N' Chives together. Place the prepared vegetables in a bowl and pour over 2/3s of the cheesy mix, stir well to combine. Season to taste and add the fresh coriander. Set aside.
  • Once the pork belly is cooked through and tender, brush each piece generously with BBQ sauce and sear on the BBQ for 3-5mins on each side – alternatively do this under the grill. Each pork belly strip can be cut into 3 pieces to fill the buns.
  • To serve, spread a little of the remaining lime juice, crème fraîche and Primula Cheese 'N' Chives mix into each slider bun before stuffing in the 'slaw, a piece of pork belly and any extras you fancy!
