Onion, Tomato and Basil Tartlets

Primula Light Cheese ‘n’ Onion with tomatoes and basil make the perfect filling for our puff pastry tartlets. Great for a vegetarian lunch or a light evening meal.

  • 375g ready rolled puff pastry sheet
  • 1 egg, beaten
  • 2 x 140g Primula Light Cheese ‘n’ Onion
  • 200g mixed colour cherry tomatoes, cut into halves and quarters
  • Freshly ground black pepper
  • Fresh basil leaves, to serve

  • Preheat oven to 200c, 180c fan, Gas 6.
  • Cut the pastry sheet into 6 squares and arrange on a baking tray lined with baking paper.
  • Score a 1cm border around the edge of each square, taking care not to cut all the way through. Brush the border of each square with beaten egg to give a golden glaze when baked.
  • Bake in preheated oven for 15-20 minutes until well risen and golden. Remove from the oven, press down the middle of each pastry square and cool on a wire rack.
  • When the pastry has cooled, squeeze a generous amount of Primula Light Cheese ’n’ Onion into the centre of each square and top with cut tomatoes. Sprinkle over freshly ground black pepper and basil leaves to serve.
