Mexican Mac ‘N’ Cheese
Put a tasty twist on the classic, everyday mac ‘n’ cheese with this fiesta of fiery flavours. This recipe is easy to make, so it’s perfect on any night you feel like spicing things up. The secret to this satisfying dish is a squeeze of Primula, whether you use Light or Cheese ‘n’ Jalapeños is up to you!
What you need
- MAC ‘N’ CHEESE
- 150 g dried macaroni
- 150 g Primula Light Cheese – Use Primula Cheese ‘n’ Jalapeños, for the perfect kick!
- 15 g jarred red jalapeños in brine, chopped
- 15 g baked tortilla chips, crushed
- 1 tsp smoked paprika, to garnish
- A handful of chopped coriander, to garnish
- MEXICAN SALAD
- 2 tomatoes, diced
- 1/2 cucumber, diced
- 2 spring onions, sliced
- 50 g sweetcorn
- 1/2 lime juice
- A handful of chopped coriander, to garnish
How you do it
Cook the pasta according to pack instructions
Meanwhile – Combine all of the salad ingredients and place in a serving dish.
Drain the pasta and set aside.
Mix the Primula Light Cheese and red jalapeños.
Stir the mixture through, evenly coating the pasta.
Top with the crushed tortilla chips and coriander.
Serve immediately and spice up your night!
