We love a Mexican themed dish, and this show stopping Mega Burrito would definitely make an impression while hosting your friends or family!

  • 1 tube of Primula Cheese ‘n’ Chives
  • 2 tbsp sunflower oil
  • 1 small onion, diced
  • 2 small garlic cloves, finely chopped
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp cayenne pepper
  • 1 tsp dried oregano
  • 500g beef mince
  • Pinch of golden caster sugar
  • 1 tbsp wine vinegar or cider vinegar
  • 400g can chopped tomatoes
  • 400g can of kidney beans
  • Salt and pepper
  • 500g cooked rice
  • Lettuce, torn
  • 150g guacamole
  • 8 tortillas
How you do it
How you do it
  • Heat the oil in a large pan and fry the onions and garlic until soft, then add spices and oregano and cook for a further minute.
  • Add the mince and cook for 5 minutes or until brown, stirring regularly.
  • Stir in the sugar and leave to stand for a minute, then add the vinegar and pour in the tomatoes.
  • Simmer for 5 minutes then add the kidney beans (including the water from the can). Season with salt and pepper, then stir and simmer for 20 mins until the mince is in a thick gravy.
  • Spoon the mince mix, lettuce, rice, guacamole and a squeeze of Primula Cheese ‘n’ Chives into a tortilla and roll into a burrito.
  • Secure by wrapping in foil (optional) and serve.
