Mediterranean Pasta Bake
Inspired by the deliciously fresh flavours of the Mediterranean, we’ve combined some of the most savoury ingredients into a single dish for one seriously filling meal. A squeeze of Primula Original Cheese adds a smooth, creamy touch (and a terrific taste of cheese) to round out the flavours in your favourite weeknight recipe.
What you need
- 300g rigatoni
- 150g chorizo, diced
- 1 red onion, finely sliced
- 500g tomato passata
- 150g Primula Original Cheese
- 100g cherry tomatoes, halved
- Basil, to garnish
How you do it
Preheat your oven to 220°C.
Cook the rigatoni according to pack instructions.
Cook the chorizo and red onion in a large oven-proof frying pan, until golden.
Add the passata and bring to a gentle simmer.
Once cooked, drain the rigatoni and add to the sauce.
Place in an oven-proof dish and top with tomatoes.
Bake for 30 minutes or until golden.
Remove from the oven and top with Primula Cheese and basil.
Serve and savour!
