Coronation Chicken Sliders

Celebrate the Queen's Platinum Jubilee with our coronation chicken sliders! Whether you're out in the garden or at a street party, these delicious bites are sure to get a royal seal of approval.

Light Cheese 'n' Onion
  • 2 tbsp Primula Light Cheese
  • 3-4 medium potatoes
  • 250g cooked shredded chicken
  • 2 tbsp mayonnaise
  • 1 tbsp raisins
  • 2 tsp mild curry powder
  • 1 tbsp mango chutney
  • 1 tsp chopped fresh parsley
  • 2 spring onions, sliced
How you do it
How you do it
  • Preheat the oven to 180c.
  • Slice the potatoes lengthwise into thin ½ cm slices. Arrange on a baking tray and spray or drizzle with oil.
  • Bake for 15-20 minutes, until cooked through but not super soft.
  • Meanwhile, mix the chicken, Primula Light, mayonnaise, raisins, curry powder and chutney in a bowl. Season to taste with salt and pepper.
  • Once the potatoes are cooked, transfer to a serving dish and top with the chicken mixture.
  • Sprinkle over parsley and spring onions and serve.
