Cheesy Cajun Chicken Skewers with Sweet Potato Chips

  • 2 tubes Primula Light Cheese
  • 2 cloves garlic crushed
  • Juice & zest of 1 lime
  • 4 chicken breasts or thighs off the bone
  • 1 ½ tbsp. Cajun spice
  • Fresh coriander

  • Cut the chicken into 1 inch cubes and set aside.
  • In a bowl mix up the Primula light tubes together with the Cajun spice, crushed garlic, lime juice and zest.
  • Add in the chicken and mix well, coating the pieces all over.
  • Cover with cling film and chill for at least ½ hour but the longer the better.
  • Prepare the sweet potato chips and place on a baking sheet. Spray well in low fat cooking spray then sprinkle over the cracked black pepper and a little salt then set aside.
  • After the marinating time, pre-heat the oven to 200ºC/400ºF/Gas Mark 6.
  • Carefully push the cubes of chicken onto skewers and place them on a foiled baking tray.
  • Place both the chicken and the sweet potato chips in the oven and cook for 25-30 minutes until thoroughly cooked and the chicken juices run clear.
  • Sprinkle with chopped coriander and serve with a super fresh salad. Easy dinner, done!
