Cheese Broccoli Soup

Our warming bowl of cheesy broccoli soup is both nutritious and delicious! Perfect for those chilly days when you fancy a comforting lunch or supper.

Tube of Primula Cheese 'n' Chives
  • 2 tubes of Primula Cheese 'n' Chives
  • 2 tbsp butter
  • 2 tbsp flour
  • 300ml milk
  • 500ml Vegetable stock
  • 1 head of broccoli
  • 1⁄2 tsp garlic powder

How you do it
  • Boil a kettle and make up the stock.
  • Finely chop the broccoli into small pieces.
  • Heat the butter in a large saucepan over medium heat.
  • Whisk in the flour.
  • Add the milk, a splash at a time, whisking constantly.
  • Once the milk is added, you should have a smooth paste.
  • Stir in the Primula Cheese 'n' Chives and mix well.
  • Add the stock gradually, mixing in between, until it has all been added.
  • Add the garlic powder and broccoli. Season to taste with salt and pepper.
  • Bring to the boil, then reduce the heat and simmer for 5-10 minutes until thickened.
  • Serve.
