Grilled Sweet Potato Toast

Make this vibrant BBQ side with Primula Cheese and a few store cupboard ingredients, it's so quick and easy to make, but looks stunning when served to your guests.


4 Sweet Potatoes

150g Primula Cheese

Olive oil

50ml white wine vinegar

½ lemon, juiced

1 handful of parsley, roughly chopped

2 garlic cloves, minced

1 tbsp. olive oil

½ chilli, finely chopped


1Place four sweet potatoes in the microwave and heat at 600w for two minutes.

2Slice sweet potato into ¼“ slices.

3Brush lightly with olive oil and place on grill. Cook for five minutes on each side.

4Meanwhile, place all the dressing ingredients into a sealed jar. Shake well before serving.

5Remove sweet potato from the grill and top with melty Primula Cheese and dressing.

6Best served warm.
