Savoury Christmas Puddings

We didn’t think Christmas puddings could get any better, until now!  You can prepare your meatballs the day before and simply cook and assemble before serving.

  • Yields: Makes 15


500g lamb mince

70g panko breadcrumbs

1 tube of Primula Original

1 handful of chopped parsley

Parsley for garnish

½ red onion

3 tablespoons of water

1 garlic clove

½ tsp salt

zest of half a lemon

2 tablespoons of olive oil

cocktail sticks


1Braise the onion with olive oil until golden then add the garlic and cook for one minute. Remove from the heat and add the chopped parsley and

2lemon zest then allow to cool.

3Add the lamb mince and 35g of breadcrumbs and season.

4Add a beaten egg and water, season, and mix well.

5Roll into small meatballs.

6Sprinkle the baking tray with your remaining breadcrumbs so your meatballs don’t stick together.

7Preheated the oven to 200°C. Place in the oven and cook for 15-20 minutes.

8Remove from oven and allow to cool for a minute before squeezing over the Primula Cheese topping and placing a piece of parsley on top.
