BBQ Pulled Chicken Stuffed Sweet Potato

Try these BBQ Pulled Chicken Stuffed Sweet Potatoes, they’re great for family get togethers, BBQs, or a tasty mid-week meal!


5 sweet potatoes

Vegetable oil

3 chicken breasts

100g kale

1 red pepper, diced

450g BBQ sauce

100g Primula Cheese ‘n’ Ham


1Preheat oven to 220°C.

2Pierce holes in the sweet potatoes with a fork and microwave for 15 minutes until potato is soft.

3Place in the oven and bake for 45 minutes.

4Warm oil over medium heat in a large frying pan, cook chicken breasts until chicken is cooked all the way through and set aside.

5Remove sweet potatoes from the oven.

6Preheat grill to high.

7Using two forks, shred the cooked chicken and return to the pan. Add kale, pepper and BBQ sauce and mix to coat evenly.

8Cut each sweet potato down the middle and fill with shredded chicken.

9Top with Primula Cheese ‘n’ Ham, and grill for 2-3 minutes.

10Serve hot.
