Mexican Mac ‘N’ Cheese

Ingredients

Mac ‘N’ Cheese

150 g dried macaroni

150 g Primula Light Cheese

15 g jarred red jalapeños in brine, chopped

15 g baked tortilla chips, crushed

1 tsp smoked paprika, to garnish

A handful of chopped coriander, to garnish

Mexican Salad

2 tomatoes, diced

1/2 cucumber, diced

2 spring onions, sliced

50 g sweetcorn

1/2 lime juice

A handful of chopped coriander, to garnish

Directions

1Cook the pasta according to pack instructions

2Meanwhile - Combine all of the salad ingredients and place in a serving dish.

3Drain the pasta and set aside.

4Mix the Primula Light Cheese and red jalapeños.

5Stir the mixture through, evenly coating the pasta.

6Top with the crushed tortilla chips and coriander.

7Serve immediately.
